Pancake Day, or Shrove Tuesday, is around the corner, which means you flipping better be ready! Sorry, I had to make at least one pancake joke! So whether you’re not a fan of traditional pancakes, looking for a healthier version of the traditional recipe, or just want something different, these should be right up your street!
You’ll need:
- 1/2 cup Greek yogurt
- 1 egg
- 1/2 cup + 2 tablespoon semi-skimmed milk
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1 large red apple
Lightly oil a frying pan and get it to a medium heat. Then dollop little bits of the mixture pan. Let them sizzle away until you see bubbles forming on the top of the pancake, the edges are solid and you can lift the pancake up easily. Its little bottom should be nice and brown!
Flip the pancakes, using your best flipping techniques, naturally!
Then repeat until you can lift you pancake nice and easily.
Serve nice and hot, either on their own, with yogurt or with maple syrup. However you serve them they’ll be gorgeous!
If you’re so inclined you could even add some raisins!
Whatever you do, sit back with a nice cup of coffee and enjoy these babies!
