I’m not even sure if you can call this a recipe, it’s really that easy!

It’s a filling, healthy breakfast or brunch option that really does the trick. It’s also pretty handy for when you don’t have much in the fridge as it really doesn’t have many ingredients.

There’s not really much more you could want from a breakfast!

Get some really crusty bread, and give it a light toasting. Living in France makes it really easy to pick up great bread – in fact, that hard bit is not eating it all day long!

Take the avocado out of its skin and remove the stone. Cut it lengthways into slices and put a little lemon juice on it.

Put an egg on to poach. You’ll know it’s ready when the whites are solid, that way you’ll have a cooked egg with a nice runny centre.

Layer the avocado and the egg on top of the bread and crack a little pepper on the top.

It really is egg-cellent! (Sorry, it had to be done!)
