Gin & Tonic Ice Lollies

Summer always screams ice creams and cheeky afternoon drinks to me; there’s just something wonderful about sitting outside in the summer sun with a G&T or a good ol’ glass of Pimms. How British! 
If you’re anywhere on the Pinterest scene you’ll have seen that G&T ice lollies are everywhere. And well, they looked so damn good that I just had to make a batch, taste test them for you – and give you the recipe!

You’ll need:
  • 1 set of ice lolly makers
  • Some slices of cucumber
  • 30ml gin – I used Gordon’s but will be using Hendrick’s next time as it’s my favourite type of gin!
  • 350ml tonic water
  • Juice of 1/4 lime

Mix your tonic water, gin and lime juice in a jug.

Pop your cucumber slices into the lolly maker.

Then pour your lovely mixture all over your cucumber – make sure you fill it right to the top!

Pop the sticks back in and then put them into the freezer for at least 6/7 hours.

Serve with a side of sun and some friends!

I think these would make an excellent treat at a summer party – it would be so much more fun than just serving G&T’s what do you think?
