Easy Bake Nutella Stuffed Cookies

Everyone loves a bit of Nutella! Whether you’re a spoon in the jar kind of girl or a more traditional Nutella on toast girl, you’re definitely going to enjoy these cookies. Even if you’re not a baker, they’re incredibly simple to make and only have 3 ingredients. Yes, Nutella, flour and egg. So even if you don’t have much in the cupboard I’m fairly sure you’ll have the ingredients to make these slices of deliciousness. I originally found this recipe on one of my favourite blogs, Lux Life, couldn’t believe how simple it was and just had to try it out!

You’ll need:

  • A cup of Nutella (280g)
  • A cup of flour
  • 1 egg

Preheat your oven to 180 degrees Celsius and line a baking sheet with baking parchment.

Mix the egg and Nutella in a mixing bowl until they’ve kind of combined, don’t panic if they’re not combining very well, just give them a good mix before you put the flour in. Sieve the flour into the same bowl and mix until combined.

This dough is quite thick and will end up being one big ball of dough! If you think it’s going to be a bit dry you can always put a splash of milk in, but you shouldn’t need it.

Take about half a tablespoon of mixture in your hands, roll it into a ball and then flatten it.

Pop it onto the baking sheet, add a teaspoon of (preferably cold) Nutella to the middle of the cookie and then make another cookie for the top layer. Press the edges together as best you can without flattening the whole cookie – just to make sure that no Nutella escapes!

Keep going until you’ve used all your mixture, and then lick the bowl!

Put them in the oven for about 8/10 minutes, until they’re hard-ish on the edges and still soft to the touch.

It doesn’t really get much easier and more delicious! The Nutella on the inside will be almost melted if you serve them warm, and if you serve them cold, it makes for a gorgeous melt in the middle moment.
