Odds and Ends Oatmeal Cookies

This all came about in a vague and vain attempt to eat a little less chocolate and be a little more healthy. Okay, so this isn’t the best health food you’re ever going to eat, but it is a little better than my regular chocolate cookie recipe. The best bit is you probably have everything in your cupboard anyway, and can chop and change the recipe to suit whatever odds and ends you have lying around that you want to use up!

You’ll need:

  • 1/2 cup flour
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup + 1 tbsp butter
  • 1 egg
  • 1 1/2 cup oats
  • 1 tsp cinnamon
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped walnuts (chop them to the same size as your chocolate chips)
Preheat your oven to 200 degrees Celsius and line a baking sheet with parchment paper. 
Melt the butter, then mix it with the sugars until they’re nicely combined. The mixture will still be slightly grainy when it’s ready. 
Beat your egg into this mixture before adding the flour, cinnamon and then the oats. Make sure all the flour is combined before adding the oats into the mixture.

Pop your chocolate chips and walnuts (or whatever odds and ends you have) into the mix, and mix until they’re spread evenly throughout.

Now for the fun bit! Use your hands to get rough ball shapes of cookie dough, and flatten them a little onto your baking sheet. Don’t flatten them entirely – you want a little bit more in the middle to make them nice and squishy!

Bake them for 10 minutes until they’re firm on the outside and still a little soft in the middle (don’t worry they’ll firm up when they cool).

Store these little bites of deliciousness in an airtight tupperware.
