Once again, Pinterest has fed my baking addiction with these delicious little Raspberry Crumb Bars! Too simple, and too tasty which all adds up to this being a very great recipe to try. And, even better, they taste like a little piece of summer, which is just what I need on this grey winter’s morning.
- 1 cup plain flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup rolled oats
- 1/2 cup packed light-brown sugar
- 1/2 softened unsalted butter
- 3/4 cup raspberry jam (or any other jam you prefer!)
Start by preheating your oven to 190 degrees Celsius (350 Fahrenheit) and lining a brownie dish with greaseproof paper.
Mix the flour, baking soda and salt in a large baking bowl, then add the oats and brown sugar.
Now for the messy bit! Use your fingertips to work the butter into the dry ingredients until the mixture is nice and moist. Don’t wash your hands just yet!
Measure 2 cups of the mixture into the brownie dish and press them into an even layer. Spread your lovely jam all over the oaty base layer, but leave a little gap around all the edges to allow the jam to spread.
Sprinkle the rest of the mixture on top and press lightly into the jam. I was feeling super sweet so drizzled a little honey on the top.
Bake these little lovelies for 35 minutes, or until they are nicely golden brown. Let them cool completely before cutting them into squares.
Try not to eat them all at once! I thought they were perfect for coffee with friends, so that’s exactly what I did!
